Executive Chef, Nicholas Tall, brings a lifelong passion for food and cooking to the Purple Palm Restaurant, and original presentations that focus on bold fundamental flavors using seasonal local suppliers. Chef Nick brings exciting culinary adventures to the Colony Palms Hotel food and beverage team with a passion and joy of sharing his cooking experiences with everyone around him. 

Prior to Colony Palms, Chef Nick resided in Hong Kong, serving as the Sous Chef to the 2 Michelin star restaurant, Amber, at the Landmark Mandarin Oriental Hotel. During his 3 years at Amber, the restaurant was awarded the #24 position of World’s Top 50 Restaurants.

We are currently interviewing for an Upscale Dinner Service Line Cook!

The Line Cook will set up their workstation with required mise en place, tools, equipment, and supplies according to standards. You will cook and prepare all menu items in accordance standards set by the Chef. You will prepare and produce menu items for the restaurants private dining and/or bar, following recipes and yield guides, and proper plate presentation and garnish for all dishes you produce. You will maintain the organization, cleanliness, and sanitation of your work areas and equipment.


  • Two years’ restaurant experience
  • Two years’ experience in a food preparation position
  • Ability to communicate in English with guests, co-workers, and management to their understanding
  • Food Handler Certification
  • Experience will Grill Station
  • Ability to lift 60lbs and stand for long periods of time
  • Must have flexible schedule

  • Experience working in a fine dining or upscale restaurant
