Job Overview:

The Wholesale Bakery Chef is responsible for managing all bakery operations at the Wise Sons Bagel & Bakery. This role works closely with the Commissary Chef, and manages the Lead Bakers, reporting to the Commissary Operations Manager. This position will manage the bakery team and work 8 to 10 hours per day, in the range of 5:00 pm - 2:00 am.

This management role leads the bakery through ownership of all culinary production including planning for volume and growth, hiring/staffing/training, product inventory and purchasing, as well as overall organization and cleanliness of the space. In addition, this role will collaborate with the Wholesale & Retail/Merchandising Managers. The logistics and flow of product entering and leaving the space are paramount.

Responsibilities include:

  • Oversee the daily production of all bakery products coming from the commissary kitchen
    • Ensure production meets quality standards and storage practices (packaging, labeling, FIFO) in accordance with safe food handling procedures
  • Utilize Wise Sons operating systems including order guides, prep lists, and schedules to maintain efficient operations including management of pars
    • Maintain weekly ordering & organization of all inventory
  • Optimize bakery operations for growth
    • Streamlined production planning for new stores and wholesale client development
    • Implement systems for training, clean-up and check-out
  • Manage labor costs to budget and lead bakery teams
    • Budget labor to fit demand of the internal and external wholesale sales
    • Hire, train, and manage bakers and packaging team
  • Receive deliveries from suppliers; manage supplier and vendor relationships
    • Ensure deliveries of all products are made on-time, working with Logistics Manager to refine schedules and communicate with delivery team
  • Ensure consistent cleaning and organization of all areas including but not limited to bakery kitchen, dry storage, walk in, rear outdoor storage, garbage and office
    • Ensure equipment is cleaned and maintained

Qualifications

  • 5 years experience managing a high output kitchen
  • Spanish language skills a must, Bilingual preferred
  • Computer skills are important. Must be able to communicate effectively through email with managers and staff. Proficient with Gmail, Google Apps, and Microsoft Excel; CTUIT
  • Professional and motivational leadership skills with the ability to manage in a diverse and fast paced environment
  • Strong organizational and time management skills
  • Be able to reach, bend, stoop and frequently lift up to 50 pounds; Be able to work in a standing position for long periods of time
  • Should expect to work 50 hours per week; Evening availability is required
  • Serve-Safe or CA Food Handler Permit is required
